Abstract


Abstract: Bromelain enzyme is a typical component of pineapple (Ananas comosus (L.) Merr.), almost all parts of the pineapple plant contain bromelain enzymes which are widely used in the food, textile and medical industries. Bromelain enzyme levels are strongly influenced by environmental factors where pineapples grow, including climate and soil elements. Bromelain is a protein and has enzyme activity that is affected by temperature and pH. This study collects bromelain enzyme data from various countries, resulting in the highest enzyme activity and protein content of local pineapple obtained from Bogor at 34 UI and 743.61 mg, optimal temperature and pH obtained from Blitar pineapple, namely 55oC and 7. which contains the highest bromelain enzyme comes from Thailand, the enzyme activity of the Phu Lae variety is 322,734 U which has an optimal temperature and pH of 60oC and 7 , the protein content of the Nang Lae variety is 220.5 mg, then other foreign pineapples that produce temperature and pH optimally comes from Nigeria Ananas erectifolius variety, which is 70oC with a pH of 7.

Abstrak: Enzim bromelin merupakan komponen khas dari nanas (Ananas comosus (L.) Merr.), hampir semua bagian tanaman nanas mengandung enzim bromelin yang banyak dimanfaatkan di industri makanan, tekstil dan pengobatan. Kadar enzim bromelin sangat dipengaruhi oleh faktor lingkungan tempat tumbuh nanas diantaranya unsur-unsur iklim dan tanah. Enzim bromelin merupakan protein dan memiliki aktivitas enzim yang dipengaruhi oleh suhu dan pH. Pada penelitian ini mengumpulkan data enzim bromelin dari berbagai negara, sehingga dihasilkan aktivitas enzim dan kadar protein tertinggi dari nanas lokal diperoleh dari Bogor sebesar 34 UI dan 743.61 mg, suhu dan pH yang optimal diperoleh dari nanas Blitar yaitu 55oC dan 7. Pada nanas luar negeri yang mengandung enzim bromelin paling tinggi berasal dari Thailand, aktivitas enzim dari varietas Phu Lae sebesar 322.734 U yang memiliki suhu dan pH optimal yaitu 60oC dan 7 , kadar protein dari varietas Nang Lae sebesar 220.5 mg, lalu nanas luar negeri lainnya yang menghasilkan suhu dan pH optimal berasal dari Nigeria varietas Ananas erectifolius yaitu 70oC dengan pH 7.
