Perbandingan Jumlah Bakteri Asam Laktat Yoghurt Sinbiotik dari Bakteri Lactobacillus Bulgaricus dan Streptococcus Thermophillus yang Diperkaya Fruktooligosakarida dan Inulin

Abstract. In Indonesia, a lot of fermented milk is sold, one of which is yogurt. Synbiotic yogurt is included in fermented milk products made using probiotic cultures of lactic acid and prebiotics. The advantage of synbiotics is to increase the survival of probiotic bacteria because a specific substrate is available for fermentation. The aim of this research is to find out which combination is the most effective to use of the probiotic bacteria Lactobacillus bulgaricus and Streptococcus thermophillus enriched with fructooligosaccharide and inulin. The combination used is Lactobacillus bulgaricus with fructooligosaccharide (combination A), Lactobacillus bulgaricus with inulin (combination B), Streptococcus thermophillus with fructooligosaccharide (combination C), Streptococcus thermophillus with inulin (combination D) using the Total Plate Count (TPC) methode. The results obtained were that the combination A contained in it was the bacteria Lactobacillus bulgaricus with 1% prebiotic fructooligosaccharide, the total number of bacterial colonies was 11.76 log (CFU / mL) or equivalent to 5,754x1011 colony/g was the most effective combination because it obtained the total number of bacteria. The highest bacterial colonies compared to other combinations and met the quality requirements for the total number of bacterial colonies according to SNI 2981: 2009 at least 107 colony/g. The higher the total number of lactic acid bacteria colonies contained in synbiotic yogurt, the higher the results of metabolism or enzymatic reactions.

Abstrak. Di Indonesia banyak sekali dijual olahan susu fermentasi, salah satunya adalah yoghurt. Yoghurt sinbiotik termasuk kedalam produk susu fermentasi yang dibuat dengan menggunakan kultur bakteri probiotik asam laktat dan prebiotik. Keuntungan sinbiotik adalah meningkatkan daya tahan hidup bakteri probiotik karena substrat yang spesifik telah tersedia untuk fermentasi. Tujuan penelitian kali ini adalah mengetahui kombinasi manakah yang paling efektif digunakan dari bakteri probiotik Lactobacillus bulgaricus dan Streptococcus thermophillus yang diperkaya fruktooligosakarida dan inulin. Kombinasi yang dipakai yaitu, bakteri Lactobacillus bulgaricus dengan fruktooligosakarida (kombinasi A), Lactobacillus bulgaricus dengan inulin (kombinasi B), Streptococcus thermophillus dengan fruktooligosakarida (kombinasi C), Streptococcus thermophillus dengan inulin (kombinasi D) dengan menggunakan metode Total Plat Count (TPC). Hasil yang diperoleh yaitu kombinasi A yang terkandung didalamnya adalah bakteri Lactobacillus bulgaricus dengan prebiotik fruktooligosakarida 1% didapatkan jumlah total koloni bakteri 11,76 log (CFU/mL) atau setara dengan 5,754x1011 koloni/g merupakan kombinasi yang paling efektif karena mendapatkan hasil jumlah total koloni bakteri paling tinggi dibandingkan dengan kombinasi lain dan memenuhi syarat mutu jumlah total koloni bakteri menurut SNI 2981:2009 minimal 107 koloni/g. Semakin tinggi jumlah total koloni bakteri asam laktat yang terdapat di dalam yogurt sinbiotik maka semakin tinggi hasil metabolisme atau reaksi enzimatis.
