Analisis Pengukuran Kinerja Manajemen Rantai Pasok pada Produk Susu Perah Menggunakan Metode SCOR di Koperasi Peternak Susu Sapi Bandung Utara (KPSBU) Lembang

Abstract. This study aims to determine how the current supply chain performance at KPSBU Lembang and how the performance of the queue system using the SCOR matrix. The research method used is quantitative descriptive. Data collection techniques used in this study were observation, interviews and library research. The data analysis technique used is the SCOR matrix. The results of the study show that the current supply chain performance involves several entities such as cow milk suppliers (suppliers), manufacturers (milk processing industry) and end consumers. The time needed by KPSBU Lembang in distributing cow's milk to IPS is in less than 1 day due to the nature of milk that is not durable so the distribution is carried out for approximately 2 hours. The results of the calculation of supply chain performance with the SCOR matrix produce a perfect order fullfilment (POF) value of 86.9% with a full order time cycle (OFCT) for 2 days. While the value of the cost of goods sold (COGS) is 42.3% with the cash to cash cycle time (CTCCC) for 2 days.

Abstrak. Penelitian ini bertujuan untuk mengetahui bagaimana kinerja rantai pasok saat ini pada KPSBU Lembang dan bagaimana kinerja sistem antrian dengan menggunakan matriks SCOR. Metode penelitian yang digunakan adalah deskriptif kuantitatif. Teknik pengumpulan data yang digunakan dalam penelitian ini observasi, wawancara dan penelitian kepustakaan. Teknik analisis data yang digunakan adalah matriks SCOR. Hasil penelitian menunjukan bahwa kinerja rantai pasok saat ini melibatkan beberapa entitas seperti pemasok susu sapi (supplier), pemanufaktur (industri pengolahan susu) dan konsumen akhir. Waktu yang dibutuhkan oleh KPSBU Lembang dalam mendistribusikan susu sapi kepada IPS adalah dalam waktu kurang dari 1 hari karena sifat susu yang tidak tahan lama maka pendistribusian dilakukan selama kurang lebih 2 jam. Hasil perhitungan kinerja rantai pasok dengan matriks SCOR menghasilkan nilai perfect order fullfilment (POF) sebesar 86,9% dengan order fullfilment cycle time (OFCT) selama 2 hari. Sedangkan nilai cost of goods sold (COGS) adalah sebesar 42,3% dengan cash to cash cycle time (CTCCC) selama 2 hari.
