Analisis Fisikokimia dan Aktivitas Antibakteri Masker Kefir terhadap Bakteri Staphylococcus aureus dan Escherischia coli Dibandingkan dengan Antibiotik Tetrasiklin dan Kloramfenikol

Abstract


Abstract. Kefir is a fermented milk product with kefir grains from bacteria (Lactobacilli, Lactococci, Leuconostoc, Streptococcus and Acetobacter) and yeast. Kefir masks is allegedly has antibacterial activity. This study aimed to analyze antibacterial activity from kefir mask to Staphylococcus aureus and Escherischia coli. In the research, antibacterial activity was showed by minimum inhibitory zone, minimum inhibitory concentration, and minimum bacterisidal concentration. The best activtity of kefir mask was compared to tetrasiklin and kloramfenikol to saw the equality of kefir mask to antibiotics. Statistic test was using One Sample Test to showed there is a significant different of minimum inhibitory zone among kefir mask 1, kefir mask 2 and kefir mask 3.

Abstrak. Kefir merupakan produk fermentasi susu dengan butir kefir dengan melibatkan bakteri (Lactobacilli, Lactococci, Leuconostoc, Streptococcus dan Acetobacter) serta ragi. Masker kefir diduga memiliki aktivitas antibakteri. Tujuan dari penelitian ini untuk menganalisis aktivitas antibakteri masker kefir terhadap Staphylococcus aureus dan Escherischia coli. Pada penelitian ini, aktivitas antibakteri dilihat melalui diameter hambat minimum, kadar hambat minimum  (KHM) dan kadar bakterisid minimum (KBM). Aktivitas antibakteri masker kefir yang paling baik dibandingkan dengan antibiotik tetrasiklin dan kloramfenikol, untuk melihat kesetaran aktivitas masker kefir terhadap antibotik. Uji statistik menggunakan metode One Sample Test untuk melihat ada atau tidaknya perbedaan bermakna dari diameter hambat antara sampel masker kefir 1, masker kefir 2, dan masker kefir 3.
